Serving suggestions

Dried fish is usually served as a main dish as part of a Japanese meal.
Jyukusei himono yakisaba (OPLT Dry-aged himono grilled Mackerel) can be prepared easily, either by boiling or cooking in a microwave oven.

Alternatively, you can quickly grill it or cook it in a frying pan or on a barbeque.
You can use cooked dried fish as a sandwich filling instead of eating it on its own.

It pairs well with alcoholic beverages such as sake, champagne or white wine.
It is an ideal sake no sakana, a side dish eaten with sake, that also pairs well with any type of alcoholic beverage from around the world.

Cooking implements

Cook our dried fish in a gas oven, fish grill, toaster oven, fish roaster or frying pan.

Fish grill with a single
heat source

Start cooking with the skin side down, then flip over to grill the skin side.

Toaster oven

Defrost first. Spread a piece of tin foil under the grill grate. Start cooking with the skin side down.
You can successfully cook our dried fish without defrosting, but it takes a little longer.

Frying pan

Preheat your frying pan. Line the pan with parchment paper and place the fish in the pan. Put a lid on the pan while cooking.
Cook over low heat until golden brown.
Flip over to cook the other side well.
If the fish has skin, start cooking with the skin side down.

Cooking time

Cooking time varies depending on the type of fish, its thickness and the cooking equipment.
You need to keep an eye on it and adjust the heat and cooking time as necessary.
The general rule of thumb is that you cook the fish until its flesh is a golden brown.

Once cooked

Serve with grated radish, sushi vinegar, ponzu vinegar, soy sauce, chili powder or mayonnaise.
Some dried fish can be grilled with cheese on top.

Characteristics

Our dried fish can be cooked quickly with minimal smoke.

Notes

Dried fish is low in moisture. When overcooked, it quickly loses oil and becomes tough.
Please be sure not to overcook.
If you do not consume it immediately, store in the freezer.
