Carefully selected fresh seasonal fish is lightly salted. The water is then removed at low temperature (0 °C) through osmotic dehydration, which allows moisture to travel through a semi-permeable membrane without removing the flavor.
Only the excess moisture inside the fish must be removed to prevent tissue damage due to freezing and spoilage before processing.
Unlike machine dried fish, the low salt content of our dried fish prevents oxidation, so our fish retain their freshness longer.
Our unique salting process helps preserve the umami, color and aroma of the fish while bringing out their full flavor.
